Amanda Turner, activities director at The Pavilion at St. Luke Village, in Hazleton, PA, provided this recipe for potato cheese soup. It’s perfect to warm you up on a cold winter day.

Ingredients:

1 medium onion

3 medium potatoes, cut in small cubes

2 cups uncooked medium noodles

2 tablespoons of salt

½ tsp. pepper

1 tablespoon dried parsley

¾ pound of sharp white cheese (like Cooper American)

Directions:

Fill a 3 to 4 quart pot ¾ full of water.

Add a medium onion cut in half, cubed potatoes, salt, pepper and parsley.

Bring to a boil and boil for 15 minutes.

Add 2 cups of uncooked noodles and boil for 10 more minutes.

Turn heat to low, remove the onion and add cheese, mix well.

Extra cheese, salt  or pepper can be added to taste.
