Andrea Salmon, from Consulate’s corporate office in Maitland, shared her recipe for pistachio pie. It’s a crowd pleaser, and requires no baking!

Ingredients:

1 Oreo pie crust

2 lbs. ricotta cheese

1 package pistachio instant pudding mix (keep in powder form, do not make the pudding)

1 cup milk

1-8 oz. tub Cool Whip Original whipped topping

I chocolate candy bar

Directions:

Put the cheese, powder pudding mix, and milk together in a bowl, and mix with a blender.

Pour the mixture into the Oreo pie crust.

Top the pie with whipped topping.

Break chocolate candy bar into pieces and drop on top of whipped topping.

Chill and serve.

Note:  This recipe will actually make enough filling for two Oreo pie crusts.
