A family friend from Morocco taught Shawnee Irmen, from Consulate’s corporate office, how to make this recipe. Shawnee’s son loves it (since he loves chicken legs and olives), so she makes it usually once a month for him and anytime he requests it.  She makes homemade French fries as a side and serves them in the middle of a large round dish with the chicken legs around the fries and then the olives.  Shawnee’s son loves to make a mess eating it.

Ingredients:

1/2 teaspoon ground ginger
1/2 teaspoon paprika
1 pound pitted green olives
1 lemon, juiced
2 cups water
1 (2 to 3 pound) whole chicken, cut into pieces
2 tablespoons olive oil
2 purple onions, chopped
salt to taste
ground black pepper to taste

Cooking Instructions:

Heat oil in a large saute pan. Add onions, and sprinkle with ginger and paprika. Saute until onions are golden. Place chicken on top of onions. Add about 1 to 2 cups of water, lemon juice, salt, pepper, and olives. Cook about 1 hour, or until the chicken is tender.
