Shawnee Irmen from Consulate’s corporate office, shares her recipe for Cherry O Cream Cheese Pie. The pie looks beautiful, and is deceivingly simple to make.

Ingredients:

1 package (8 oz.) cream cheese, softened at room temperature

1 can sweetened condensed milk

1/3 cup lemon juice (measured accurately)

1 teaspoon vanilla extract

1 (9-inch) graham cracker pie crust

1 can chilled cherry pie filling

Directions:

In a medium sized bowl, beat cream cheese until light and fluffy.

Gradually add sweetened milk and stir until well blended.

Stir in lemon juice and vanilla.

Turn the mixture into the crust.

Refrigerate two to three hours.

Garnish with chilled cherry pie filling before serving.
