Apples are at their peak during fall. In the USA, there are over 2,500 varieties of apples. Supermarkets across the country have apples such Honeycrisp, Granny Smith, Braeburn, Macoun, Fuji, Cortland, and so much more. This easy healthy recipe has a yogurt dressing that’s low in calories and packed with nutrition from the Granny Smith apple which have 13 times more phytonutrients than the Ginger Gold variety.

Ingredients:

1/4 cup plain, nonfat Greek yogurt

2 tbsp. mayonnaise

1 tbsp. lemon juice

1 tbsp. cider vinegar

1 tsp. honey

1 pound carrots, peeled

1 Granny Smith apple, cored

1/4 cup fresh chopped mint

salt to taste

Method:

In a small bowl whisk together the yogurt, mayonnaise, lemon juice, vinegar, and honey until smooth. In a food processor, grate the carrot then the apple. Transfer to a large serving bowl and toss with the dressing. Mix in the chopped mint and season with salt if necessary. This can be made ahead and stored in the fridge for 3 days in an airtight container.
