INGREDIENTS

  • 2 tbsp. skim milk
  • 2 slices thin-sliced whole wheat bread
  • 1¼ lb. ground white-meat turkey
  • ¼ c. grated zucchini
  • ¾ c. finely chopped onion
  • ¼ c. part-skim ricotta cheese
  • 2 tbsp. grated Romano or Parmesan cheese
  • 2 tbsp. chopped flat-leaf parsley
  • 1 tbsp. garlic paste
  • 1 large egg
  • ½ tsp. salt
  • ¼ tsp. freshly ground black pepper
  • 1 tbsp. olive oil
  • 2 c. marinara sauce
  • 12 oz. dried whole-wheat spaghetti
