Sandy Snook, the activities coordinator at the Manor at Penn Village in Selinsgrove, PA, shares her recipe for Streusel-cherry cheesecake bars. The combination of tastes and textures in the different layers is delightful.

Cookie Base Topping Ingredients

1 (1 lb 1.5 oz.) sugar cookie mix

¼ cup cold butter or margarine

4 oz. cream cheese

Filling Ingredients

20 oz. cream cheese, softened

½ cup sugar

2 Tbsp. all-purpose flour

2 eggs

21 oz. canned cherry pie filling

Semi-sweet chocolate morsels, melted

Instructions

Heat oven to 350 degrees.

Spray 13 x 9 inch pan with cooking spray.

Place cookie mix in a large bowl.

Cut in butter and 4 oz. cream cheese, until mixture is crumbly.

Reserve 1 ½ cups of the mixture for topping.

Press remaining mixture in bottom of pan.

Bake 12 minutes.

 

In large bowl, beat 20 oz. cream cheese, the sugar, flour, and eggs with electric mixer on medium speed until smooth.

Spread cream cheese mixture evenly over partially baked cookie base.

Spoon pie filling evenly over mixture.

Sprinkle with reserved topping and drizzle semi-sweet melted morsels on top.

Bake 40 to 45 minutes or until light golden brown.

Cool 30 minutes.

Refrigerate two hours or until chilled.

Store covered in the refrigerator.
