Chris Bryson, Consulate Health Care’s CEO, contributed this side dish for a corporate potluck luncheon.

Ingredients:

2-20 oz. cans pineapple chunks (in own juice or light syrup)

6 T. flour

1 c. sugar (I use 3/4 cup)

2 c. shredded sharp cheddar cheese

1 stick butter

1 c. or sleeve Ritz crackers, crumbled

Directions:

Drain pineapple and reserve 6 Tablespoons of the juice.  Combine flour, sugar and juice.  Fold in the pineapple and cheese.  Pour into 8×8 casserole dish and cover in cracker crumbs.  Melt butter and drizzle over crackers.  Bake, uncovered, at 350 degrees for 25-30 minutes.
