This delicious recipe for molten lava cake was submitted to the Consulate Family Cookbook by Jennifer Weinstein, who is the Southeast Division’s District Director of MDS and Case Mix.

Ingredients:

4 Tbsp. butter

1 Tbsp. flour

1/3 cup bittersweet chocolate chips

1 large egg plus 1 large egg yolk

2 Tbsp. sugar

Directions:

Heat oven to 450 degrees.

Prepare two small ramekins using a small amount of softened butter to grease the inside of the ramekin and then dust the inside with flour.

Place butter and chocolate in a microwave safe bowl and microwave on high for 20 seconds.

Repeat after stirring until melted and smooth.

In another bowl, beat the egg, egg yolk and sugar until lighter in color.

Add the melted chocolate and flour and beat until batter is smooth.

Divide batter into the prepared ramekins.

Bake until edges are set and the center is still jiggly, about 8-10 minutes.

Let stand for a minute then run a knife around the edge, then invert onto a plate.

Dust with confectioners sugar.

Serve immediately.

LavaCake

You can serve the cakes with whipped cream, ice cream, or fresh berries.   My favorite is the recipe below.

Ingredients:

1 pint of fresh strawberries

1 tbsp good balsamic vinegar

Dash of fresh pepper

Directions:

Slice strawberries and place in medium bowl.

Add balsamic vinegar and pepper and let stand at room temp for an hour.

Top Molten Lava Cakes with strawberries and add a dollop of whipped cream.
