The day that she came up with this recipe, Denese Crutchfield was at home enjoying her day off. One of her neighbors came by and said “Hi, are you from Jamaica?” Denese said yes, and the neighbor responded, “Do you know how to make oxtail?” Denese then offered to make oxtail for her neighbor. In the process of making the seasoning for the oxtail, Denese realized she wanted to make the recipe more nutritious and give it a different flavor, so she added in some honey!

Denese is an administrative receptionist at Envoy of Woodbridge in Woodbridge, Virginia.

Ingredients

1 cup honey

1 teaspoon sea salt

2 sprigs of fresh thyme

1 whole onion, chopped

2 scallions, chopped

1 tomato, chopped

1-12 ounce can of beef broth

1 oxtail

Directions

Clean the oxtail.

Mix all of the ingredients except the oxtail together in a large bowl.

Add the oxtail to the bowl and mix well to season.

Place the seasoned oxtail into a pot and pour the honey on top.

Then, pour two or three cups of water into to pot.

Let the oxtail boil for 30 minutes.

Preheat the oven to 360 degrees.

Bake the boiled oxtail for an hour until it is tender, but not burned.

Lastly, don’t forget to put some love in it!
