Meg Knauer of Frostburg Village in Frostburg, Maryland provided her deliciously sweet homemade bean salsa recipe to the Consulate Family Cookbook.

Ingredients:

1 can black beans – drained

1 can black eyed peas – drained

1 can white shoe peg corn – drained

1 small jar pimentos – diced & drained

1 small red onion – diced

1 small hot banana pepper – seeded & diced

1 cup sugar

1 cup vegetable oil

1 cup apple cider vinegar

bean salsa

Instructions:

To make marinade – Boil sugar, oil & vinegar until sugar dissolves.

Mix all ingredients in container overnight.

Drain marinade and discard.

Serve with scoop-shaped tortilla chips.
