Ivy Newton, a Medicaid specialist for Consulate Health Care, shares her recipe for Fiery Breadfruit Fritters. For those unfamiliar with breadfruit, it is a traditional staple in Hawaii, and is sometimes called the tree potato, for its potato-like consistency when cooked. Breadfruit has high quality protein and packs a healthy dose of vitamins and minerals. This recipe provides a great introduction to this tropical fruit.

Preparation time: 10 minutes

Cook time: 10 minutes

Total time: 20 minutes

Ingredients:

1/2 cup cooked breadfruit, mashed

1 cup cassava flour

2 large eggs

2 tablespoons onion, finely chopped

1 teaspoon red pepper flakes

2 tablespoons water

½ teaspoon salt

Oil for frying

Directions:

In a large bowl, add all ingredients and mix well.

Add just enough water so the mixture will make small soft balls with the dough.

Fry the balls in hot oil until golden brown.

Place fritters on a paper towel to soak up excess oil and serve warm.
