If you have diabetes or prediabetes, you know how important it is to manage your diet. Despite that knowledge, it can be difficult to pass up sugary desserts on a daily basis. The good news is there are plenty of enticing treats that are safe for diabetics to consume. Try whipping up one of these diabetic-friendly delicacies the next time you’re craving something sweet.

Strawberry roll

This fruity treat is sure to be a new favorite! Create this recipe, courtesy of Taste of Home magazine, by acquiring these ingredients:

  • 4 large eggs, separated
  • 2/3 cup sugar
  • 1 tablespoon milk
  • 1/4 teaspoon lemon peel, grated
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon cream of tartar
  • 8 ounces Mascarpone cheese
  • 2 tablespoons lemon juice
  • 2 tablespoons sweetener
  • 2 cups fresh strawberries, sliced
  • 2 teaspoons confectioner’s sugar.

 

Instructions

To start, place egg whites in a bowl and allow them to sit for a half-hour at room temperature. Thoroughly coat a baking pan in cooking spray, line it with wax paper and add another layer of cooking spray.

Mix the egg yolks, 1/3 cup sweetener, lemon peel and milk together in a large bowl. Add the flour, stirring it in gradually. Setting this mixture aside, grab the egg whites and add the cream of tartar to them. Beat these ingredients together using an electric beater on medium. Stop beating when the combination forms stiff peaks. Next, add the remaining sweetener teaspoon by teaspoon until it’s all dissolved. Add the egg yolk combination to the egg white mixture by gradually folding it in with a rubber spatula.

Spread this batter in the lined pan and allow it to bake at 375 degrees for about 10 minutes. Leave it to cool for 5 minutes while you dust a kitchen towel with confectioner’s sugar. Once it’s cooled, turn the cake onto the towel and peel away the wax paper. Roll the cake and towel up together and set them aside. In a small bowl, mix the lemon juice and cheese together. Spread the cheese combination on the cake, then top it with the strawberries. Gently roll the cake so it resembles a jelly roll, cool for one hour and then serve.

Mocha Ricotta Tiramisu

This Italian after-dinner classic is theperfect way to satisfy your taste buds when they’ve got a hankering for something sweet. Start making this recipe, courtesy of Reader’s Digest magazine, by grabbing the following items:

  • 8 ladyfingers, cut in halves
  • 1 teaspoon instant espresso powder
  • 2 tablespoons coffee liqueur
  • 1 teaspoon sweetener
  • 1 cup low-fat ricotta
  • 1 cup plain low-fat yogurt
  • 1/4 cup confectioner’s sugar, sifted
  • 1 teaspoon vanilla extract
  • 1 ounce semi-sweet chocolate, grated.

 

Instructions

First, break each ladyfinger piece into 3 sections, then divide them between 4 parfait glasses. Put the espresso powder into a glass measuring cup and pour 1/2 cup boiling water over it. Add the liqueur and sweetener, then stir until all ingredients are dissolved. Pour the mixture evenly among the parfait glasses and allow the ladyfingers to soak.

In a large bowl, beat together the yogurt, ricotta, vanilla extract and confectioner’s sugar until the topping is creamy and well-blended. Divide this mixture up among the glasses, then top each serving with grated chocolate. Chill for a half-hour and serve.
