Ivy Newton, Medicaid specialist, shares an authentic African recipe in the Consulate Family Cookbook. Efo riro is a rich vegetable soup that is native to the Yoruba people of Nigeria.

Ingredients:

1/2 pound beef chuck

1/4 cup palm oil

3 handfuls of amaranth leaves or spinach

1 medium red pepper, diced

2 tablespoons of ground shrimp

2 medium onions, sliced

2 tablespoons locust beans

2 medium Irish potatoes, diced

1 hot pepper, finely chopped

1 teaspoon salt

4 cups vegetable stock

Directions:

Brown beef, onions, and palm oil over high heat in a large, lidded pot.

Reduce the heat to medium and add stock, hot pepper, and salt.

Cover and cook for 20 minutes.

Add potatoes to pot, cover, cook an additional 10 minutes.

Add remaining ingredients, cover and cook for 10 more minutes.

Serve with fufu or white rice.
