Denise Durrant-Buckle makes this potluck favorite for Consulate Health Care’s Atlanta office. Follow the recipe, and you can enjoy these delicious chicken wings too!

Prep Time:     20 minutes

Cook Time:     45 – 60 minutes

(Makes 4 servings)

Ingredients

3 lbs fully thawed, chicken wings (Cut into 3 sections; toss the wing tip or save for stock)

Seasoning

1 large onion

1 cup green onions (scallion)

5 cloves garlic

2 tablespoon fresh thyme

1 Scotch bonnet (habanero) pepper

2 teaspoons salt

1 teaspoon ground pimento (allspice)

1 teaspoon black pepper

3 tablespoons soy sauce

Chicken

Blend all seasoning in food processor, rub seasoning onto chicken wings (wear gloves); leave to marinate in refrigerator for at least 4 hours (overnight is better).

Oven Procedure

Preheat oven to 375 degrees.  Arrange wings in roasting pan; pour remaining marinade over them.  Bake uncovered for 20 minutes; increase the heat to 400 degrees and bake for an additional  20-25 minutes or until fully cooked. For extra crispness or darker color, broil for an additional 5 minutes.

Grilling Procedure:

Heat grill to medium heat.  Place the wings onto the grill; turn wings every 2-3 minutes until they are fully cooked.  The wings will become dark brown and crisp.
