Scott Allen, from Fletcher Health and Rehabilitation Center in Tampa, Florida shares his recipe for broccoli quiche in the Consulate Family Cookbook. His mother gave him the recipe which has been a long-time family favorite for both Thanksgiving and Christmas.
Ingredients:
1 package chopped frozen broccoli (cook per package directions, then drain)
1 cup grated cheddar cheese
Small yellow or sweet onion, chopped
1/2 green pepper, chopped
3 eggs
3/4 cup Bisquick
1 1/2 cups milk
Salt & pepper (to taste)
Instructions:
Mix eggs, Bisquick, milk, salt & pepper together.
Grease or spray bottom & sides of a 10 inch pie pan.
Mix together the chopped broccoli, onion, green pepper & cheese, then spread in pie pan.
Pour milk/Bisquick mixture in pie pan over broccoli and cheese.
Place pie plate on a baking sheet to catch any spillover.
Bake at 350 degrees for 45 minutes or until knife placed in center comes out clean.
This recipe can be made with any vegetables. Mixed frozen veggies work really well.
